Hand-forged in the Batangas tradition

The balisong was born in Batangas, Philippines. Every knife in this catalogue is made by Filipino artisans and metalworkers, many from families with generations of experience, now working in the United States. Blades are ground from 440C stainless, D2 tool steel, VG10, high carbon and Damascus, and fitted to handles of kamagong ebony, carabao horn, Philippine deer horn and bone.

Description

The BF-171 is a three piece balisong steak set, two knives and a fork, polished high carbon steel, rose wood handles. It is the two piece set with a second knife, and the second knife changes what the set is for.

Why three and not two, or four

A two piece set is a place setting. It is a gift for one person, and it works beautifully as that.

A three piece set is dinner for two, because in practice the fork gets shared or one person eats with an ordinary fork and nobody minds. Four piece sets look tidier in a photograph and are mostly bought by people who will use two of them.

We make the three because it is the number that actually gets used, and because a set that gets used is worth more than a set that stays in a drawer looking symmetrical.

Plain edges, again

No serrations on either knife. Serrated teeth tear the cut face of the meat and push the juice out of it, and they cannot be resharpened by anyone without specialist equipment. A plain edge slices cleanly and comes back on an ordinary stone in a few minutes.

High carbon is the friendliest steel there is for that. It gives ground quickly, you feel the burr form, and you can see the result immediately. If you have never sharpened anything, a set like this is a reasonable place to learn, because the consequences of a mediocre first attempt are a slightly less perfect steak.

Matching the wood across three pieces

Rose wood varies. Colour runs from a light orange brown to something close to purple, and the streaking varies with it. We cut the panels for a set from the same board wherever the board allows, so a set looks like a set rather than three knives that happened to meet.

It will still not be identical across all three. Wood is not manufactured. What we can promise is that they came from the same tree, which is a rather better promise than a colour match.

Three folding knives at a table

Worth being practical about. These fold, which means each one has a pivot, and a pivot does not want to sit in standing water while somebody finishes their wine. Clear them, wash them by hand, dry them properly, and put them back in their sheaths only once they are genuinely dry.

Do that and the pivots stay smooth for decades. Leave them in a sink overnight and you will be introduced to the one maintenance job these knives can actually demand.

Every knife is checked for lockup, pivot action and edge before it goes in the box. Nothing ships that we would not keep for ourselves.

Processing

Most orders leave the bench in 1 to 3 business days. If the knife you picked is not in stock we forge it for you, which takes roughly 2 to 3 weeks. Engraving adds a little time on top of that.
